This is my favorite way to prepare a Turkey. I love it because it requires very little attention; and, it always turns out super moist. My fellow’s family requests my Old Bay Turkey at every holiday meal… they are from Maryland, the home of Old Bay. This recipe can be used on a whole turkey, a turkey breast or even chicken:) Make sure that you have some fantastic creamy mashed potatoes to soak up the fantastic drippings:) Enjoy..Happy almost Gooble Gooble Day:)
Old Bay Turkey
Adapted from Moist & Tender Turkey Breast from Allrecipes
- 1 Turkey (or turkey breast, chicken)
- 1/2 cup melted unsalted butter, at room temperature
- 3 cups homemade Turkey stock… (or good quality low sodium chicken or turkey stock)
- 1/2 cup Duke’s Mayonnaise (use real mayonnaise here.. no low fat stuff:) – Shucks, after all it is a holiday!!
- 1 Tablespoon Old Bay Seasoning
- 2 large onions
- 5 large stalks celery
- 1 large leek , split in half and cleaned to make sure the dirt is out:)
- 5 large carrots, peeled with the two ends cut off
Method
Preheat oven to 325F.
Rinse off turkey and take out little package inside ( you can use all the contents but the liver for a lovely stock- saute the liver up separately for a lovely treat:). Dry off the turkey with a paper towel.
WASH your hands:)
In a small bowl mix the Dukes Mayonnaise, room temperature melted butter & Old Bay Seasoning. Set aside.
In a large roasting pan, place alternate carrot and celery with the leeks in the middle. These vegetables will be your “roasting rack”- and they taste fantastic as a side dish.. as they will have soaked so much goodness up from the Turkey!!!
Then place the Turkey in the roaster pan on top of the “roasting rack”. Tuck the wings under the turkey body. Then tie the two legs together with kitchen twine.
Take the Old Bay Seasoning/butter mixture and rub all over the turkey. Make sure you cover the entire turkey liberally:) Sometimes I need to make more of the Old Bay Seasoning/ butter mixture:)
Then place the onions inside the turkey.
Then pour the stock all around the turkey.
Place in the oven at 325 F, for about 30- 35 minutes per pound. Honestly, I just put mine in with a thermometer in the thickest part of the thigh and wait until it says 165 F. Then I take it out of the oven, and tent a piece of foil over it. Do not tightly cover with foil… tent with foil:)
FDA Turkey Cooking Time Sheet Turkey Cooking Time Sheet, click on the green link to see the Turkey cooking time sheet.
Then take out of the roasting pan, place on cutting board and let the best man cut:)
You can make a gravy out of the drippings or if you are like me I already have my gravy made but I thin it out with the drippings:)
Then place the “roasting rack” vegetables in a dish.
Enjoy:)
God bless everyone this wonderful Thanksgiving:)
Old Bay is good to season so many different things with, it is good in deviled eggs, (don’t make a awful face) it is great in fried chicken livers. (we are country people here.) LOL I have found so many uses for Old Bay it is just an all around good seasoning, even in potato salad. Thanks for “Liking” my post on Old Fashion Flaky Pie Crust. I am looking forward to looking around on your blog as well. 🙂

You are beautiful pilgrims!! Love the turkey and I had never thought of using Duke Mayo before. Excellent to know! Your Uncle Mort looked like such a nice man; as well as a master carver!
Thank you Petit 4 Chocolate:) Uncle Mort was a fabulous fellow:) They just don’t make them like him anymore:)… and Dukes is the only mayo I use for anything.. old trick I learned in a NYC diner:)
Love that it’s FDA-ed! 😉
I was looking up Turkey cooking times and thought gee there must be a lot of people looking this up… so I updated the post the include the FDA Turkey Cooking Sheet 🙂

God bless your good works!
Gosh the more you tell me the more you are just like me:) LOL:)
This sounds amazing! Love that you use vegetables as a rack.
As it’s so close I’ll wish you (y’all) a Happy Thanksgiving!
Thank you, Johnnye Enough:) Happy Thanksgiving to you too.. ( I think it is a good reason to eat, why not join your friends across the pond as they stuff themselves silly..LOL ) I love the vegetables that are the rack veggies, they just melt in your mouth:) I don’t eat meat so this is the closest I come to eating meat… flavor wise:)
Life intrudes so often, yet we may post less often – but alywas with the same quality! The poppy qualifies well for RT, the blurred green background with the bold ruby feels like a painting, as if oils or acrylic were used. It is beautiful!
That looks so fabulous and adorable photos!
Thank you, The Healthy Flavor:) … it tastes even better than it looks:)
You two make great looking pilgrims. I like the idea of using mayo in addition to butter. You’ve made me hungry!
Thank you Noted Inn Ashville:) I like the pilgrim attire, it is very slenderizing; however, it is quite toasty in the Sunny South Florida sun as we are sitting outside doing face painting:) as for the Mayo & butter- it produces one of the tenderest birds you ever had:):)
What a wonderful way to spend Thanksgiving morning!!!!
Before I started going to the shelter, I found myself all stressed out with the hustle and bustle of Thanksgiving preparations and I forgot what the holiday was even supposed to be about… Being Thankful! Once I started going to the shelter, I found that God gave me a more grateful heart and somehow I had “extra time”:) I am extremely grateful for this opportunity to act on my Thankfulness:)
Well said, indeed! My father was a minister and his Thanksgiving verse was: “Give, and it will be given to you. Good measure, pressed down, shaken together, running over, will be put into your lap. For with the measure you use it will be measured back to you.” Luke 6:38 Happy, Happy Thanksgiving. We Canadians have our Thanksgiving in October so we always like to share yours as well….
That is one of my favorite verses!! Thank you for sharing:) Happy Be-lated Thanksgiving:) by the way what do Canadians eat for their Thanksgiving? Any special traditional foods that are you favorites?
Turkey, stuffing, cranberry sauce, mashed potatoes and pumpkin pie. We are very traditional!!! And I must confess that I had several (won’t tell you how many) pieces of pumpkin pie….I couldn’t help myself and no regrets….
Ohhh… I never eat and tell either..LOL 🙂
I love your heart
Thank you:)
it is almost 1.40am and looking at that handsome turkey, makes me hungry.. 😀
thank you for the sharing..
Anytime.. LOL literally..LOL 🙂
