Roasted Radishes...

Roasted Radishes … You will wish you would have tried this delicious gluten free side years ago!!

Yesterday, I was the Team Leader at the Fort Lauderdale Ronald MacDonald House Miami Dolphins Special Teams March 2013 Adopt a Meal.. gosh that is a mouthful!!!  Anyway, my theme was Irish Spring.  The volunteers did a wonderful job making a delicious dinner for the RMH families:)  One of the dishes we made was Roasted Radishes.  Now this dish sounds weird… I know.  But hear me out.  My mother found the idea for this in a cookbook we picked up at the Goodwill Thrift Store.  (Which by the way, I might add is a fantastic place to find cookbooks:)  My mother thought this would be  the perfect recipe to make for spring time.  She was right, as if she would be wrong..haha:)  The more years that pass the more I realize that my mother is very rarely wrong:)  I guess one day I will be as wise as her.  Until then, I just follow her advice, like roasting radishes which was a great idea!!! Thank you, Mom!

Roasted Radishes

Adapted from the Silver Palate Cookbook

  • Radishes (cleaned and dried)
  • Extra Virgin Olive Oil
  • Coarse Gray Sea Salt

Preheat the oven to 450 F.

Then quarter the radishes.

Place the radishes on a foil lined baking sheet.

Drizzle a little Extra Virgin Olive Oil on top of them.  Then toss with your hands to make sure they are coated.  Do not add too much oil or they will be greasy.  Then sprinkle liberally with coarse grey sea salt.

Place in the oven and roast until fork tender( for about 20- 25 minutes tossing after about 10 minutes.)

When you roast a radish something happens to that in your face bold radish taste.  The radish becomes an elegant vegetable, with a mild delicate taste.  Roasted radishes are lovely on their own or in a salad.  I like mine on top of a spinach salad with a bit of of lemon zest and a nice simple vinaigrette.
