Vanilla Bourbon Cranberry Sauce… Just in time for the holidays:)

One of my favorite side dishes is cranberry sauce:)  I love the sweet and tart flavor profile:)  I found this cranberry sauce recipe years ago in Bon Appetit ; it has been in my recipe file ever since:) Do try to make your own cranberry sauce this year… it is really simple and trust me you will think opening a can of cranberry sauce will be a cardinal sin after you make your own!

Vanilla Bourbon Cranberry Sauce

Adapted from Bon Appetit’s Bourbon Cranberry Sauce

  • 4 cups fresh cranberries
  • 1 cup cane sugar
  • 1 cup Sugar- in-the-raw
  • 1 vanilla bean (USE A REAL BEAN for this recipe.. Vanilla extract just doesn’t do the trick:)
  • 1/4 teaspoon Saigon Cinnamon
  • 1/4 cup bourbon

Procedure

Preheat oven to 350 F.

Rinse cranberries in a strainer.

Place cranberries in a 8×4 glass dish.  Place sugars & cinnamon in dish.

With a paring knife slice, the vanilla bean in half and scrape out the vanilla seeds. Place vanilla seeds on top of the cranberries & sugar.  Place vanilla bean  in dish too:)  Then with a spoon stir the cranberries, sugars, cinnamon, vanilla seeds and vanilla bean together to coat all the cranberries.

Cover dish tightly with heavy duty aluminum foil.  Place in 350 F oven.

Set timer for 30 minutes.  After 30 minutes stir cranberry mixture.

Then turn heat up to 375 F.  Cover back up with foil and set timer for 20 minutes.

After 20 minutes take foil off and stir.  Then place back in oven for another 15 minutes uncovered.

After 15 minutes take out of oven and stir in the bourbon.  Note it will seem a little wet at this point don’t worry it will thicken as it cools.

Let mixture cool completely and enjoy:)

This freezes very well and holds in the refrigerator very well:)  Try some with some brie:)
