Verdict NOT Guilty…. Chocolate Pudding

My boyfriend & I went to the movies this afternoon.And he did not purchase any soda or for that matter anything.  I was very proud of him staying true to his commitment to eat healthy.  I wanted to give him a treat for doing so well at the movies; however, that idea did not seem like one that would encourage him to continue in his healthy eating pattern.  William loves chocolate … chocolate anything; thus, my inspiration for formulating the Verdict Not Guilty…  Chocolate Pudding.  This carob filled treat is a fiber & vitamins:)  Here is an interesting link comparing the benefits of Carob verses Chocolate… http://www.gilead.net/health/carob.html

This is a really fast and easy way to satisfy your Chocolate hankerings without filling guilty:)  Kids will love this:)

Verdict Not Guilty… Chocolate Pudding

makes 6 small servings

  • 6 bananas frozen for at least a day (just throw the whole bunch in the freezer)
  • 3/4 cup Carob Powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 cup  smooth Peanut butter (optional)
  • Whipped heavy cream ( optional- for topping)
  • extra cinnamon (optional -for topping)

When ready to make the pudding, take the bananas out of the freezer.

At this point you can leave them on the counter for about 20 minutes…. or microwave them as described below.

Put 4 of them in the microwave for about 1 1/2 minutes on high.

When they are soft to the touch they are ready, you don’t want them hot:)

Then put the other 2 bananas in the microwave for about 45-60 seconds.  You don’t want them soft, use to the point where you can peel them.

While second batch of bananas are in microwave, peel first 4 bananas and put into a food processor or blender.  ( If you have both appliances, I recommend the food processor for this.)

Then puree the 4 bananas in the food processor.

Once 4 bananas are pureed , peel & add the 2 bananas that were in the microwave. (These bananas are supposed to be cold)

Then puree the all the bananas until smooth.  At this point you will probably need to scrape down the sides and push the banana around, the harder bananas can be a little tricky.

Once all bananas are pureed, then add the vanilla & the  cinnamon, blend to combine.

Then start adding the carob powder, make sure that the lid is on after you add the carob powder or it will go everywhere.. it is powdery:)

After adding the carob powder, put peanut butter in microwave safe dish and microwave for about 20-30 seconds until it is runny and melted.

Then add the melted peanut butter to the banana carob mixture, scrape the sides down and puree for about 20-30 seconds.

The texture will thicken 🙂

Then spoon into dessert dishes  and serve…without the guilt:)

Hint : this look lovely in a martini glass:) or in a shot glass:)

Sometimes I like to top this with a little left over hot peanut butter & a bit of freshly whipped heavy cream topped with a sprinkle of cinnamon:)
